What happens to a listing when its rights cycle ends?

It disappears from the site on the day it expires. Every page that names a broadcaster reads the same filtered list, so an ended deal stops being shown everywhere at once rather than waiting for someone to notice and edit it out.

Why do some listings have no end date?

Because the end date has not been established. Rights holders do not always publish when a cycle closes, and inventing a plausible date would be worse than admitting the gap — so the field is left empty and counted openly rather than filled with a guess.

How often is this checked by a person?

A person re-checks each competition's listings against the rights holders' own schedules. A build fails automatically if any competition goes longer than 180 days without that check, or if a listed cycle is within 60 days of ending.

Does an expiry date mean the competition disappears?

No. It means that broadcaster's rights to it end. Another broadcaster usually takes over, sometimes in the same market and sometimes not — and until that is confirmed against the new holder's own listings, this site says nothing rather than guessing.
